Peel and quarter squash. Slice bell pepper and onion into small pieces equal to size of squash. Mix all together in a oven safe dish or pan. Salt and pepper to taste. Drizzle with a fair amount of olive oil or other desired oil. Bake at 350 °F for 30 minutes to 1 hour, depending on desired tenderness of veggies.

My husband loves these and would not eat any of these vegetables other ways. The onion adds to the sweet flavor.
