Ingredients
to taste salt
1/8 tsp garlic powder (optional)
2 Tbsp olive oil
1/2 minced red bell pepper
1/2 minced green pepper
1/4 cup fresh parsley, chopped
4 boneless skinless chicken breasts cut in bite sized chunks
1/2 minced red onion
Directions
Heat oil in skillet and add veggies and garlic. Saute until tender. Add chicken and cook until browned through. Season with salt and pepper. In the last couple of minutes add fresh parsley. Serve over rice or on safe tortillas like a fajita.
