Ingredients
2 lb ground elk
1/2 cup real maple syrup
1 Tbsp sage
1 Tbsp salt
2 Tbsp pepper (or less – this is very spicy)
Directions
Mix all ingredients together. Shape into patties, freeze between layers of wax paper, and then wrap.
Notes
Note that ground elk is very low fat. These will need to have oil in the pan to fry.
Substitutions
Be sure to use real maple syrup and not pancake syrup.
