1 cup Aunt Jemima Enriched Yellow Corn Meal
1/2 cup brown rice flour
1/2 cup gluten-free flour mix
2-4 Tbsp sugar
4 tsp baking powder
1/2 tsp sea salt
1 cup milk or dairy-free milk alternative
1 egg or equivalent replacement
1/4 cup vegetable oil
Preheat oven to 425 °F.
Mix dry ingredients. In separate bowl mix wet ingredients (mix egg or egg replacer alone then add to wet ingredients). Mix wet ingredients into dry ingredients.
Bake in a round, nonstick 9 inch pan for about 20 minutes.
