Ingredients

3/4 cup sorghum flour
1/2 cup potato starch
1/4 cup garbanzo bean flour
1/4 cup tapioca starch
1/2 cup brown sugar
1/2 tsp salt
1 tsp guar or xanthan gum
1 tsp baking soda
3/4 tsp powdered ginger
1 Tbsp honey
1 Tbsp lemon juice or vinegar
5 Tbsp oil
1 cup apple juice
handful allergy-safe granola
1-2 Tbsp brown sugar

Directions

Blend dry cake ingredients in large bowl. Add in wet ingredients and mix. Pour into greased 8″ cake pan. Sprinkle with brown sugar and granola.

Bake at 350 °F for 30 minutes.

Susan uses Enjoy Life Foods Very Berry Granola made with rice.

Use whatever crunchy granola type cereal is safe for your needs.
