fresh peppers, diced
2 cans cannelini (white kidney) beans
to taste salt and pepper
Sautee chicken and peppers in oil. Add to crock pot with beans and chicken broth to cover. Salt and pepper to taste. Cook all day until meat is thoroughly cooked.
The flavor of this will vary greatly with the types of peppers used. We like pretty hot peppers but bell peppers work well also. I like to use multiple colors of hot peppers for this.
