Cranberry Millet Bread

Ingredients

1/2 cup millet flour
1 1/2 cups gluten-free flour mix
1 cup sugar
2 tsp baking powder
1/2 tsp baking soda
2 tsp xanthan gum
1/3 cup pineapple or orange juice
1/2 cup water
1 equivalent egg replacement
2 Tbsp oil
1 cup cranberries, fresh or frozen
1 cup chopped nuts (optional)

Directions

Sift together dry ingredients. Combine wet ingredients. Add all at once to dry ingredients and stir until well combined. Add cranberries.

Pour into well greased loaf pan. Bake at 350 °F for 45-50 minutes.

Notes

This one is good toasted. I make this in mini loaf pans - it's a tray with 6 x 1 cup molds.

Egg replacement options:

- 1 scant Tbsp Ener-G Egg Replacer + 2 Tbsp water
OR
- 4 Tbsp applesauce
