1 tsp salt
2 tsp xanthan gum
1/2 cup tapioca starch
4 tsp baking powder
1/2 cup olive oil
1/2 cup applesauce
1 1/2 cups cornmeal
1 egg replacement for one egg
1/2 cup DariFree™ or other milk substitute


Mix dry ingredients then add remaining ingredients. Bake in greased muffin tin at 400 °F for 15 mintues. Makes 8 muffins.
