Chocolate Topped Rice Crispy Treats

Ingredients

1 cup soy butter
1 cup corn syrup
1 cup sugar
6 cups crispy rice cereal
2 cups chocolate chips
4 Tbsp soy or other milk alternative

Directions

Mix soy butter, corn syrup and sugar together in double boiler. Heat and mix until smooth. Mix into rice cereal and press into 9×13″ pan. Cool.

Heat chocolate chips and milk alternative in double boiler until melted and spread over rice cereal. Cool.

Cut into squares.

Notes

This is an adaptation of Scotch-A-Roos. The original calls for a combination of butterscotch and chocolate chips, but there aren’t any dairy free butterscotch chips available so I doubled the chocolate chips.
