Ingredients
2 Tbsp olive oil
4 large carrots
3 medium leeks
Directions
Slice carrots and leeks about 1/4″ thick. Heat oil in skillet. Saute carrots and leeks in oil until soft or, if you prefer, until leeks begin to caramelize.
