Ingredients

1 lb carrots, peeled and cut into 3 inch slices
3 Tbsp sugar or sweetener
1/4 cup tapioca starch
1 Tbsp olive oil
3 Tbsp sweet rice flour or tapioca starch
maple sugar

Directions

Process in food processor until smooth. Pour into an 8 inch square baking pan and bake at 350 °F for 45 minutes. Remove and put maple sugar on top. Put in oven another 10 – 15 minutes until golden.
