4 Tbsp margarine
2 cups finely chopped yellow onions
12 carrots, chopped
4 cups chicken stock
1 cup orange juice
to taste salt and pepper
orange zest


Cook the onions in the margarine on low heat 15-20 minutes. Add carrots and stock, bring to boil and simmer 30 minutes. Puree the solids and liquid in a food processor (in batches). Return to the pot and add orange juice. Season with salt and pepper to taste. Add orange zest to each bowl for garnish and serve.
