Ingredients

1 cup white rice flour
1 Tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 Ener-G Egg Replacer, prepared
1 cup rice milk
2 Tbsp cooking oil
2 tsp cinnamon (optional)

Directions

Stir together flour, sugar, baking powder and salt.

In another bowl combine egg replacer, milk and cooking oil. Add to flour mixture all at once.

Stir mixture just till blended but still slightly lumpy.

Cook on hot griddle. 1/4 cup batter for regular size pancakes, 1 Tbsp batter for dollar-size pancakes.

Fluffy and delicious.
