1 box cake mix (makes 2 - 9 inch layers)
1 sm box instant pudding mix
6 Tbsp flour
1 tsp baking powder
1 12 oz can unflavored seltzer water
1/3 cup melted shortening


Combine dry ingredients. Add seltzer and melted shortening. Mix with an electric mixer until well blended. Bake at 350 °F 18 minutes for cupcakes, 30 minutes for 2-8 inch round pans.

The batter will be much thicker than "regular" cake mix.



It is unknown whether this will work with soy and corn free cake and pudding mixes.
