Ingredients

1/4 cup sorghum flour
1/2 cup brown rice flour
1/2 cup potato starch
1/4 cup garbanzo bean flour
1/4 cup tapioca starch
1/3 cup sugar
1/2 tsp salt
1 tsp guar or xanthan gum
1 tsp baking soda
3/4 tsp cinnamon
1 Tbsp lemon juice or vinegar
2 Tbsp oil
1/2 cup apple juice
1/2 cup rice milk
1/4 cup mashed bananas
brown sugar

Directions

Blend all ingredients. Spoon by 1/4 cups into greased muffin tins. Sprinkle brown sugar on top. Bake at 350 °F for 20 minutes.
