Ingredients
4 cloves garlic, chopped
3 Tbsp olive oil
3 shallots, minced
1/4 cup pomegranate juice
2 yellow tomatoes
6 Roma tomatoes
2 tsp basil, oregano, parsley, chopped and mixed
1 bay leaf
1 tsp sage
1/2 cup butternut squash, chopped
2 cups shiitake mushrooms, chopped
Directions
Sauté garlic in olive oil. Add other ingredients (except squash and mushrooms.) Simmer for 60-75 minutes, until reduced. Add squash and mushrooms and simmer additional 15 minutes.
Serve over gnocchi or other pasta.
Notes
This goes well with Pumpkin Gnocchi [1].
Substitutions
Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.
