Mix the margarine, bananas and sugar together. Add in the baking soda, salt and vanilla and mix. Add in the flour gradually, until all mixed. Add chocolate chips, if desired.
Drop by rounded teaspoonfuls onto cookie sheets. Bake at 350 ° until they start turning golden brown on top, approximately 12-15 minutes.
