Ingredients

1 1/4 cups millet or rice flour
1/2 cup potato, corn, or tapioca starch
1 tsp xanthan gum
3 heaping tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1/2 cup sugar
1/3 cup oil
1 cup applesauce
1/2 tsp cinnamon (optional)

Directions

Sift dry ingredients together. Add wet ingredients and mix until blended. Pour into greased 9 x5 loaf pan. Bake in a preheated 350 °F oven for 45 minutes. Cool for 15 minutes and remove from pan.

Substitutions

Applesauce can be replaced with pear puree, 2 mashed bananas or canned pumpkin.
