Ingredients
1 cup sifted barley flour
1/3 cup shortening or margarine
3 Tbsp water, more if needed
3-4 apples
1/4 cup sugar
1 tsp cinnamon
1/2 cup brown sugar
3/4 cup oatmeal
1/2 tsp cinnamon
1/4 cup shortening (optional)
Directions
Preheat oven to 425 °F.
Cut 1/3 cup margarine or shortening into barley flour. Add enough water to make a good pie dough. Start with 3 Tbsp and gradually add a Tbsp at a time.
Roll out on floured board and place in pie pan. Shape crust and trim edges.
Peel, core and dice apples (we used Gala). Place in crust. Top with sugar and 1 tsp cinnamon.
Mix together brown sugar, oatmeal, and cinnamon. Cut in shortening, if using. Sprinkle over pie.
Bake for 30 minutes, then reduce heat to 350 °F for 10 minutes.

Substitutions
Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.
