Ingredients

1 1/2 cups rice flour
1/4 cup cocoa
1/2 cup sugar
1/4 cup oil
1/4 tsp salt (optional)
1 cup water
1/2 tsp baking soda (optional)

Directions

Rub the inside of an 8 inch by 4 inch loaf pan with oil, and shake flour in it so the bottom and sides are coated. You can use cocoa instead if you prefer.

Pre-heat oven to 350 °F.

Stir together the dry ingredients in a large bowl.

In a separate bowl, stir together the water and oil.

Stir the liquid ingredients into the dry ingredients until they are mixed in thoroughly.

Put the batter into the prepared loaf pan.

Bake the cake for 30-40 minutes (until a toothpick inserted into the center of the cake comes out dry). Overbaking will make the cake very dry.
