Ingredients

2 cups cooked chicken
2 cups chicken broth
16 oz peach-pineapple preserves or peach jam
1 20 oz can pineapple chunks (including the juice)
2 firm plums, chopped
1/2 cup vinegar
1/2 cup sugar
3 Tbsp cornstarch
1/3 cup water
to taste garlic powder
to taste pepper
broccoli (optional)
water chestnuts (optional)

Directions

Mix cornstarch and water together.

Add all ingredients into large pan and cook until heated through.

Serve over rice.

Notes

This was last night’s dinner. Mark’s review “This is the best dinner you’ve ever made in my whole life! Better than pizza.” Everyone had seconds. Dino said it was slop but told the kids not to tell me it was good.

If you cook a chicken – or chicken parts – in the crockpot, then de-bone it, you can freeze the chicken in baggies, and you’ll have broth right there to freeze.
