Ingredients
1 Tbsp dairy-free margarine
1/2 cup finely chopped peeled and cored apple
1/2 tsp pumpkin pie spice
1 Tbsp pure maple syrup
1/3 cup nut-free granola (optional)
1/4 cup dried cranberries
8 oz So Delicious® Dairy Free Plain Coconutmilk “Yogurt”
2 tsp orange juice
2 tsp brown sugar
Directions
Melt margarine over medium heat in a medium skillet. Add apples and pumpkin pie spice. Sauté for 10 minutes.
Pour in maple syrup. Remove from heat. Stir in granola and cranberries. Spoon mixture into 4 (4 oz) ramekins or custard cups.
In a medium bowl, whisk yogurt alternative and orange juice until smooth. Spoon yogurt alternative mixture on top of apple mixture. Refrigerate custards for at least 1 hour.
To serve, sprinkle 1/2 tsp brown sugar on top of each custard. Caramelize the sugar with a blowtorch by slowly sweeping the flame back-and-forth or place custards under a high heat broiler. Let the sugar harden about 2 minutes before serving.
Notes
This is an easy, no bake custard with sautéed apples and nut free granola.
Substitutions
Use any dairy-free Greek or thick plain yogurt. Dairy free yogurt such as soy or coconut is available at major grocery stores or health food stores.
Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.
Coconut: Although classified by the FDA as a tree nut, coconut is not a common allergen and is not related to tree nuts. If you have a tree nut allergy [1], consult your physician to find out if you need to avoid coconut.
