Participants Needed for Research Study - Parent Survey

Researchers at the University of Mississippi Medical Center invite families of children with food allergies ages 6 through 18 years to participate in an online survey. The study is designed to learn more about how parents and kids deal with the challenges inherent in living with food allergies and managing the risk for unintentional allergy exposures (for example, parenting issues, parent worries/concerns, and child emotions and behavior).

The survey will ask you to answer a number of questions, and should take about 20-30 minutes to complete. It is completely anonymous and can be accessed at the following link: Living with food allergies survey

Parents should answer about the child with the most severe allergies if they have more than one child with food allergies ages 6 through 18 years of age.

NIH Commits Additional Funding for Food Allergy Research

On Wednesday, May 14, the Children and Families Subcommittee of the Senate Health, Education, Labor and Pensions Committee hosted a hearing entitled “Addressing the Challenge of Children with Food Allergies.” The hearing drew attention to the need for increased research funding and school-based education and training programs to deal with the issue of life-threatening food allergies. During the hearing, Dr. Anthony Fauci, Director of the National Institutes of Health, committed to at least doubling the NIH commitment to food allergy research from $13 million to $26 million.


Anne Muñoz Furlong Appointed to APFED Board of Directors

The American Partnership for Eosinophilic Disorders (APFED) announced last week the addition of Anne Muñoz-Furlong to its board of directors. Ms. Muñoz-Furlong brings with her 17 years experience gained as the founder, president and CEO of the Food Allergy & Anaphylaxis Network.



Four Good Reasons for Reading Labels EVERY Time



Thanks to those of you who have been sending in names of products that contain common allergens. Here are some of them:


  • Strawberry Chex® contain peanut flour, soy flour and milk.

      Important label reading points: 1) Different varieties of the same product can have different ingredients. 2) Different varieties are sometimes made on the same equipment, so be sure to check out any cross contamination issues if you see one variety that contains an allergen you need to avoid.


  • Minute Maid HeartWise® orange juice is made with plant esterols derived from highly refined peanut or soy oil.

      Important label reading points: 1) Different varieties of the same product can have different ingredients. 2) Highly refined oils like soybean oil or peanut oil have an exemption from the FALCPA labeling law that went into effect in 2006. Manufacturers are not required to clearly label products with highly refined oils with the plain English terms of the common allergens "peanut" or "soy."


  • Tropicana Healthy Heart with Omega-3 is made with fish oil and fish gelatin (tilapia, sardine, anchovy).

      Important label reading points: 1) Different varieties of the same product can have different ingredients. 2) Different varieties are sometimes made on the same equipment, so be sure to check out any cross contamination issues if you see one variety that contains an allergen you need to avoid.


  • Baker's Bright, a product used to create a shine on baked goods, comes in two varieties: one contains a milk derivative, and one contains a soy derivative.

      Important label reading point: Ready-to-eat items from a bakery or a grocery store bakery are not required to be labeled in compliance with FALCPA. Therefore, the ingredient statement on ready-to-eat baked goods containing Baker's Bright may not be labeled with the plain English term of the common allergen, "soy" or "milk".

Fruity Chicken & Rice Salad

Recipe created by Kristin J
Made without milk, soy, peanut, egg, tree nut, wheat, gluten, corn, fish, shellfish, sesame.

Ingredients
2 cups rice, cooked & cooled
1 medium baked chicken breast, diced
1/3 stalk celery (including leaves), diced
1/3 cup dried cranberries
1/4 cup diced red bell peppers (optional)
zest & juice from one orange
1/4 cup rice vinegar
1/4 cup canola oil
3 tsp sugar (optional)
1 tsp dried mustard powder (optional)
to taste salt & pepper

Instructions
In a medium bowl, combine the canola oil, vinegar, mustard, sugar, salt & pepper. Add the orange zest & juice, celery and peppers and stir. Add the chicken and rice and mix well. Stir in the cranberries, then refrigerate until ready to serve.

Sunny Squares

Recipe Created by Karen Eck
Made without milk, soy, peanut, tree nut, wheat, gluten, egg, fish, shellfish, corn, and sesame.

Ingredients
1/4 cup butter or margarine
1 cup powdered sugar
1 cup sunflower seed butter
3 cups crispy rice cereal
1 1/2 cups chocolate chips
1/4 cup sunflower seed butter

Instructions
Melt margarine on stove in large pot at medium-low heat. Add powdered sugar and 1 cup sunflower butter and mix well. Take mixture off stove and add cereal. Mix well. Put mixture in 8x8" pan and press down. Put in refrigerator to cool.

In the meantime, melt the chocolate chips and 1/4 cup sunflower butter in a saucepan on medium-low heat. Take the pan out of refrigerator and spread the melted chocolate mixture on top. Let cool. If desired, speed process by placing in freezer for 5-10 minutes.

Cut into small squares when cool. They are very rich.

Substitutions
Verify the ingredients of the powdered sugar as most contain cornstarch and some contain wheat starch. Verify the ingredients of the crispy rice cereal as many contain corn sweeteners and barley malt.

Any safe nut or seed butter can use used instead of Sun Butter.
Use dairy, soy, gluten, nut and/or corn free ingredients as needed.
